| Since I didn't know where to post this, and cooking is kinda DIY... post your faves!
Peach Cobbler with Crunchy Oatmeal Crust
You need: 1/2 cup granulated sugar 1 1/2 cups of oats 1 1/2 cups packed brown sugar 3/4 cup all-purpose flour 12 tablespoons unsalted butter, cut into pieces and at room temperature 2 big cans of peaches (i like to buy the dustiest cans because that means that they have been sitting on the shelf longer and are softer)
Directions:
1.) Preheat oven to 375 farenheight 2.) Pour peaches, with syrup, into saucepan on medium heat. Stir in 1/2 cup sugar. stir while heating, until peaches are soft and warm. take off heat 3.) Mix oats, brown sugar, flour, and 12 tablespoons of butter in bowl with fingers 4.) Pour peaches into baking dish, then sprinkle oat topping over it 5.) bake for 25 minutes
voila! peach cobbler! its really nowhere near as complicated as it sounds. |

| mmmmmm...pink strawberry cupcakes....gods, I'm going to have to make some for Beltaine on Saturday!
I make yummy dessert too....
Strawberry Shortcakes:
Topping: 1/3 cup/75 ml water ΒΌ cup/50 g granulated sugar 1 tablespoon/15 ml fresh lemon juice 12 ounces/350 g fresh strawberries, hulled and quartered
To prepare the topping:
Place a medium saucepan over a medium to high heat. Add the water, sugar and lemon juice and simmer gently for 2 minutes or until the sugar is dissolved and the mixture is syrupy. Add the strawberries and remove from heat.
Gently stir the mixture, allowing the strawberry mixture to cool. The strawberries will soften slightly and flavor the syrup as it cools.
Take two small sponge cake rounds and sandwich some of the strawberry topping on it, and add some whipped cream. Then top with more whipped cream, and some more topping.
Mmmmmmm | |

| i need recipes sometimes, but sometimes I make stuff on a whim. Like everytime I make brownies, I like to make a raspberry or strawberry glaze to put over it. I don't have a set recipe, but here's a sort of approximation: strawberries/raspberries water sugar cornstarch Begin by washing fruit. Put them in a mesh strainer, like this one: Hold the strainer over a bowl and use a spoon to mush out all the juice. If I use raspberries, I like to mush it until there's nothing but seeds left. While you're doing that, bring a bit of water to a boil. Add sugar to it and allow to sit, warm, on the burner. Add the fruit juice and stir. To thicken, mix a small amount of ice-cold water with cornstarch and then pour into sauce. Add until it reaches the desired consistency. Allow to cool and drizzle over hot, dark chocolate brownies. |
